Breakfast, anyone?

Here is Ryan's recipe, in case you want the best pancakes ever.

½ cup oatmeal, slightly blended
1 cup whole wheat pastry flour
4-6 tablespoons all-purpose flour
2 tablespoons sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 cups buttermilk (gotta use the real stuff)
2 tablespoons vegetable oil
2 eggs

Beat eggs and add other liquids. In a separate bowl sift dry ingredients together. Mix liquid and dry ingredients with a light hand. Cook on a hot griddle. Cast iron is best.

Thanks! It's just in time for our pancake dinner plan this evening. We'll just have to find all the right ingredients...

The fancy grains aren't really necessary. You can do it with just all-purpose white flour. We've found that this way they can be mostly whole grain and still be light and fluffy. The buttermilk, however, does make a big difference. (So does the cast iron.) If you experiment with the recipe and find a variation you like, let us know.

Since it said to mix the pancakes with a "light hand" James wasn't allowed to stir. His hand is much heavier than mine. Ellie's was the lightest, but she isn't so good at stirring. She just likes to mix it with her hands and eat!
